On Top Of The World

Italian tempeh nuggets from Students Go Vegan Cookbook over pasta and peppers

Stir fry with tofu, sugar snap peas, peppers, and bean sprouts

I made a "tomato sauce" with crushed tomatoes, red peppers (my neighbors gave us a bunch of peppers and I am trying to use them up), veggie broth, spices, and spinach

Wow I am in desperate need of a post. I have been way busy doing so much, and then absolutely nothing at the same time. I started volunteering where I remove invasive plants. It is great to know I am helping the envirnment and I love working outside. I went to visit my aunt in Massachusetts and we went up to New Hampshire and climbed to the top of Mt. Monadnock. It is the world’s most climbed mountain and to top has been reached by Ralph Waldo Emerson and Henry David Thoreau; two of my favorite writers. It was awesome to reach the summit and feel like I was on top of the world.

Oh wow, Kate. This is amazing to see the expansive sights up there and also seeing you so high above it all. Way to reach the summit and what a beautiful views from way up top.

There is a mountain, Cowles Mountain, near where i live, the highest point in the city of San Diego, where i have been hundreds of time, and i have photos on my blog from being up there (one has Mattie in it, too!)... i know the feeling so well of being there and seeing so much... here you can see the Pacific Ocean out to the west and the mountains out to the East and Mexico to the South... it's incredible.

Absolutely GREAT quote from Thoreau, and how way cool that he went up there, as did Emerson (two fab writers!!). What a neat thing to write about here, Kate.

Congrats on your volunteer work; what a wonderful thing to do. i have done similar work in the past... doesn't it feel so good to help the planet!? i wish more people took the time to do what you are doing. Thank you!

i love the food too... that's not an afterthought, your creations are yummy (i have to check out the Students Go Vegan cook book) and please post more as you can.

What cool mountain-climbing photos! I love the photo of you at the summit. And your food looks awesome- made me realize I haven't had tempeh or tofu in quite a while!

Kate, those are some awesome shots from the mountaintop. Emerson and Thoreau are two of my favorite writers as well, and I love the quotes you included. I'd love to visit there sometime!

Your tempeh looks good. I have never had it before. It is kinda pricey. I use tofu and seitan for everything.

Great post. I've paged thru that cookbook, even though I am way past the age of being a student, and loved the quick healthy recipes. Great shots of your trekking, too!
