A Quicky

I went to a BBQ for the Fourth of July at my friend’s house and made a great salad. They had grilled Portobello mushrooms for me and lots of fruit. It is really nice when people go out of their way to provide food that I can eat. I love when People surprise me.

Corn and Black Bean Salad

2 cups fresh corn kernels
1 cup diced bell pepper (about one pepper)
1/2 cup chopped black beans
2 tablespoons fresh cilantro
1 (15 oz.) can black beans, rinsed and drained
1/4 cup balsamic vinegar
1 teaspoon sugar
2 teaspoons oil (I use safflower)
1.2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon freshly ground black pepper
Dash of salt

Combine corn, bell pepper, onions cilantro, and beans in a medium bowl. Mix vinegar and remaining ingredients in a small bowl (I find it easier to measure out the vinegar and add everything to the measuring cup). Drizzle vinegar mixture over the salad and toss to evenly coat. Cover and chill for a minimum of 30 minutes. Garish with avocado slices.





I made a burrito with the left overs and ate it with salsa and Terra chips.


Chai Tea Soy Lattes


I mixed cooled double strength chai tea (the kind without honey) with ice and soy milk. So, so good!

I took a similar salad to my fourth of July picnic but your dressing sounds better. Mine was a little flat so next time, I'm trying yours. I, too, love it when people make an effort to make sure there's something for the veg*ns to eat.

I really like the looks of your salad. I love veggie-based but lettuce-less salads. And I could stand to bring some healthier vegan options to bbqs- besides my boyfriends delicious and unhealthy potato salad and VwaV chocolate chip cookies. I will make this for my next bbq!

That is so cool about the food at the party, and the photo of that bean salad looks magnificent- literally out of this world! Glad you had a happy 4th.

i have been away from blogging for a while to take care of Mattie so i have some catching up to do here... i'll be back for sure... i saw part of an earlier post about Dr. Bronner's. His magic soap, Sal Suds and all those bottled yummy cleaners and soaps are great stuff but you are right... NOT recommented to be used as/for toothpaste!

Also, yes, i think a lot of us accidentally have ingested some non-veg stuff from time to time. It's a bummer when it happens when we know about it for sure... we just have to do the best we can!

i also have some old running shoes and belts made with animal parts that when they wear out, that will be that. There are so many non-animal goods out there to be worn!!

i want to THANK YOU for your kind words about Mattie on my blog. i appreciate your kindness and compassion for animals... and care and concern for Mattie especially. She seems to be coming along but it's been a long, rough road.
